Below is a selection of our burgers past and present. We have around four burgers on our menu at a time which changes weekly depending on what ingredients are available or when the Troll has sudden idea for a new flavour combination.
With our signature stinky sauce, made with Brighton blue cheese and Langham's Hip Hop beer, this evolution sits on a bed of crisp, organic new season mixed leaves full of peppery and mustard flavours and a good dollop of our homemade smoked garlic mayonnaise. This springtime version is topped with our own pickled onions.
Forged in lava from the mountains of fire comes a closely guarded secret of the ancient fire trolls. The Trollkano brings together the flavours of carolina reaper chilli, chipotle, chocolate and bacon to create a truly intense burger experience.
The aged beef patty is topped with our rum and chilli BBQ sauce, a slice of melted chilli marbled St Giles cheese, fresh jalapeños and our chilli-chocolate bacon jam. This sits on a bed of crispy lettuce, chilli and garlic mayonnaise and spicy, fresh salsa.
A taste of the Mediterranean with Sussex ingredients. The bolognese ketchup is made with roasted Sussex tomatoes, a hearty glug of Plumpton wine and wild marjoram foraged on the hill just above the vineyard.
The aged beef patty is topped with a slice of tomato, caramelised romero peppers, bolognese ketchup and a local mozzarella made from the farm's own herd of Buffalo in Hampshire. This sits on a bed of locally grown rocket and basil salad with Twineham grange cheese shavings and a balsamic reduction.

The aged beef patty comes topped with creamy Sussex garlic and herb cheese, maple syrup candied bacon, homemade pickles and onion rings. Served on a bed of winter slaw with honey and mustard mayonnaise.
It's Kentucky style steak in the form of a cheese and bacon burger!

A burger inspired by the rustic cuisine of rural Belgium during the time of the "saisonnaires", farm workers who worked fields of forgotten summers, quenching their thirst with refreshing saison beer.

Smothered in our smokey, fruity, rum BBQ sauce, made with roasted Sussex tomatoes, chillies and lime. Topped with smoked Foresters cheese, oak smoked bacon and slices of Sussex vine tomatoes. Sits on a bed of organic lettuce and chilli and smoked garlic mayonnaise.
Back in the 17th century, in Tewksbury, England, there was a local custom of creating fiery balls of grated horseradish and mustard flour which were then mixed into a paste with beer and honey. Now known as Tewksbury mustard.
We've decided to recreate this age old recipe using local ingredients. Our Sussex/Tewksbury mustard is made with freshly grated, homegrown horseradish, mustard flour, Brighton honey and Langham's Hip Hop beer. We put a generous smear on both sides of the patty for double the heat!
The burger also comes with home pickled onion and smoked Foresters cheese and sits on a bed of peppery, mustard leaf salad.
